Anaheim Chile Pepper – Dried Whole

This is an heirloom Chile that was developed in New Mexico more than 100 years ago.This Chile would become the granddaddy of all future New Mexico pod types. They are big, fleshy and have mild heat ranging from 500 – 1,000 Scovilles.

We dehydrate them whole, with the caps on to retain the most flavor. Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
