Big Jim Numex Chile Pepper – Dehydrated

Big Jim has incredible New Mexican chile flavor, thick flesh and mild to medium heat. A favorite for chile rellenos. Grown in south-central Virginia, our dehydrated Peppers are fully ripened on the plant, picked at the peak of flavor and then dried whole with caps on to retain flavor. The dry red Legacy Big Jim chile can be used to make delicious red enchilada sauce. Heat Level: Mild to Medium  Scoville 2,000 – 4,000.

FLAKED peppers can be blossomed in oil for the rue base of dips, stews and sauces, releasing the full flavor. WHOLE peppers can be revitalized by a 15-minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
