Chimayo Chile Pepper – Dehydrated Whole or Flake

This is an heirloom chile that has been grown for generations in the Chimayo Valley of northern New Mexico. We grow them on our farm in south-central Virginia. A native strain, the Chimayo has fantastic red chile flavor, it’s heat similar to a Jalapeno. At first it tastes sweet and then medium hot. Its great flavor is the result of hand selection over hundreds of years. The Chimayo red chile sauce is popular on enchiladas and burritos. Mild level heat of 4,000-5,000 SHU.

FLAKED peppers can be blossomed in oil for the rue base of dips, stews and sauces, releasing the full flavor. WHOLE peppers can be revitalized by a 15-minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.

4- THE ONLY ANTEDOTE FOR CAPSAICIN IS WHEY PROTEIN FOUND IN ANY
MILK PRODUCT. DO NOT USE WATER OR CARBONATED BEVERAGE.
5- PEPPERS IN THE HOT CATAGORIES CAN HURT YOU, USE THEM
