This is an heirloom chile that has been grown for generations in the Chimayo Valley of northern New Mexico. A native strain, the Chimayo has fantastic red chile flavor, it’s heat similar to a Jalapeno. At first it tastes sweet and then medium hot. Its great flavor is the result of hand selection over hundreds of years. The Chimayo red chile sauce is popular on enchiladas and burritos. Medium level heat of 4,000-5,000 SHU.
Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
