Anchos (Poblano) Pepper – Dried Whole

Fresh green poblanos make some of the best rellenos because of their mild heat and heart-like shape. The Poblano is allowed to age on the plant to a mature red color before picking and drying. Anchos are the dried form of this pepper, and are used in making many sauces like mole and they are one of the ‘Holy Trinity’ of Chiles. Heat Level: Mild  Scoville 500 – 1,000.

Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
