Anchos (Poblano) Pepper – Dehydrated – Whole or Flake

Fresh green poblanos make some of the best rellenos because of their mild heat and heart-like shape. We allow the Poblano to fully ripen on the plant to a mature red color bursting with flavor before picking and dehydrating. Anchos are the dried form of the Poblano pepper, and are used in making many sauces like mole and they are one of the ‘Holy Trinity’ of Chiles. Heat Level: Mild ┬áScoville 500 – 1,000.

Dehydrated & flaked they are best blossomed in oil as a stew base. Dehydrated whole, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
