Fish Chesapeake Bay Pepper – Dehydrated Whole

This wonderful pepper was a staple of the baymen on the Chesapeake in the 1800s but fell out of cultivation as those communities moved off the Bay. In the mid 1990s 3 jars of seeds were discovered in a garage in Baltimore; some of the seeds were donated to the Heritage Seed Bank at Monticello and the rest were cultivated for commercial distribution. The plant itself is compact and makes a beautiful ornamental with small, variegated leaves of green and white shading fruit which can show as ivory, green or orange with white striping, and finally red when fully ripened. Not as hot as a jalapeño, the flavor is lively and displays the fruity finish common in Aji and Caribbean peppers.

WHOLE peppers can be revitalized by a 15-minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
