Ghost Red or Bhut Jolokia Pepper – Dehydrated Whole

This Chile became famous for being the first ‘hottest pepper in the world’ and is used for everything from hot sauces to tear gas. Originally from India, it is named for the Cobra because it’s bit is like the venom. Possible, but not tested, Scoville scale: about a million SHU units.

FLAKED PEPPERS can be blossomed in oil for the rue base of dips, stews and sauces, releasing the full flavor. WHOLE peppers can be revitalized by a 15-minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
