Guajillo Chile Pepper – Dried Whole

The guajillo, ancho and pasilla are referred to as the “Holy Trinity of Chiles”. They are all used together to make authentic Mexican mole sauces. Guajillos are very common to Mexican cooking, and are the workhorse of chiles with a lot of dazzle. Grind them to flakes to add heat to pizza or salsas, or steep them into hot chocolate for a delicious spicy treat to warm you straight through. Medium level heat.

Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
