Holy Mole or Pasilla Bajio is the dried form of the Chilaca chile and means little raisin in Spanish. This refers to its appearance with dark brown wrinkled skin. Use this pepper fresh for enchilada sauce or salsas. Use it dried and powdered in Mexican mole sauces. Darkens and rounds out the flavor of a Chile. The flavor is nutty and tangy. Heat ranges about 600 – 900 Scoville units.
Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
