Jalapeno Purple Pepper – Dried Flakes

These peppers starting off green, then maturing to a dark purple color, which eventually turn deep red which is the hottest.  They bring an enjoyable medium heat to the table with a little more sweetness than your average green Jalapeño Chili. How hot is the purple jalapeño? It shares the same exact Scoville heat range as the typical jalapeño pepper, 2,500 to 8,000 Scoville heat units. The average purple jalapeño, though, sits a little hotter in that range because of when its harvested.

Dried & Flaked they are best blossomed in oil as a stew base. Dehydrated, they can be revitalized by a 15 minute soak in water, vinegar or a combination of both. Save the liquid for the sauce.
